You really, really must buy free-range eggs, not just because of the flavour but because the way battery hens are kept is truly a scandal. The only reason the practice persists is because we buy cheap eggs. Is the price saving really so big to warrant us not paying for the hens to have a half-decent existence?
Consider this, Tesco charges 94p for large eggs laid by caged hens. They also sell large eggs laid by hens free to roam at, wait for it, 99p. It is less than 1p per egg difference! If you eat say 3 eggs per week, thats a saving of 3p per week, £1.56 per year! So for £1.56 per we can all release the poor hens from a life of caged misery, discomfort and torture.

So, get yourself some medium or large free-range eggs. The size is important as it will take longer to cook. For this method use a medium free-range egg as a benchmark. I'll tell you later on how to adjust for the larger or smaller egg.
